02-04-2012 Quinoa Salad
4 cups vegetable broth
1&1/2 cup raw whole grain red quinoa
1 cucumber, diced
1 red and yellow pepper, diced
1/2 cup tomatoes, diced
1/4 cup olive oil
1/3 cup raspberry vinegar
1/2 cup sweet peas
2 cloves garlic, minced
Sea salt and pepper to taste
Boil quinoa 15 minutes until fluffy in vetagable broth. Whisk vinegar, oil, garlic, salt and pepper. Add quinoa to mixture after it's cooled, then toss in vegetables and dressing. Cool before serving.

04-04-2011 Quinoa with Mushrooms and Spinach
2 Tbsp extra virgin olive oil
2 large shallots, minced
2 cups mushrooms, sliced
1/2 cup quinoa, rinsed
1/2 cup white wine
1 & 1/2 cups mushroom stock or vegetable stock
1/2 lb fresh spinach, chopped
Parmesan cheese to taste
Heat the olive oil in a large saute pan. Saute shallots and mushrooms in olive oil over high heat. Stir in the white wine, and when the wine is absorbed, add the quinoa and the mushroom stock. Stir to combine and lower the heat as low as possible. Cover the pan and let simmer for 20-25 minutes or until spinach is cooked. Stir to combine. Serve immediately, with parmesan on top and an extra drizzle of olive oil.... more
12-23-2010 Butternut Squash Soup
1 (2 to 3 pound) butternut squash, peeled and seeded
2 Tbsps butter
1 medium onion, chopped
6 cups chicken stock
2 teaspoonsful ground nutmeg (or to taste)
Salt and freshly ground black pepper
Cut squash into 1-inch chunks. In large pot, melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15-20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper. Serve hot. Delicious and hearty!... more
09-24-2010 Blueberry Tabouleh Salad
1 Cup cracked bulgur wheat
1 Cup boiling water
2 Tbsp chopped walnuts
1 Tbsp extra virgin olive oil
1/2 Cup chopped fresh mint
2 Tbsp finely chopped fresh parsley
1 Cup fresh blueberries
In a medium bowl, pour boiling water over cracked wheat. Stir well, cover and set aside for 1 hour. In a small skillet, heat walnuts over medium heat, stirring constantly until lightly toasted. Set aside. Drain remaining water from cracked wheat; then toss the soaked cracked wheat with olive oil, walnuts, mint, parsley and blueberries. Serve at room temperature.... more
05-08-2010 Chickpea and Feta Salad
2 Tbsp lemon juice
1 Tbsp olive oil
1/2 cup minced leek or red onion
2 cups baby spinach leaves
1 x 15 oz can chickpeas, rinsed and drained
2 medium carrots, grated
1/2 red bell pepper, finely diced
1/4 cup toasted sunflower seeds
2 heads romaine lettuce cut into 1/2 inch thick ribbons
1 x 15 oz can diced tomatoes drained
1/2 cup crumbled feta cheese
Balsamic vinegar for drizzling
1. Whisk together lemon juice and oil in bowl. Stir in
leek, and season with salt and pepper, if desired. Set
aside.
2. Roll 7 or 8 spinach leaves into tight cylinder then
slice into thin strips. Repeat with reamining spinach
leaves.
3. Combine spinach, chickpeas, carrots, bell pepper, and
sunflower seeds in large bowl. Stir in leek mixture
and toss to coat.
4. Divide romaine among 8 plates, top with chickpea
salad, and arrange tomatoes around salad, if using.
Garnish each serving with 1 Tbsp feta, and drizzle
